The oils from our sweetest lavender are absorbed into the sugar as they whirl around in an herb mill. Substitute a tablespoon of this sugar in a shortbread or scone recipe. Because lavender can embrace a recipe subtly, or turn it into bitter perfume if over used, this sugar is the best way to start experimenting.
